- Shredded Coconut: unsweetened, organic coconut.
- Maple Syrup: I used dark maple syrup that my neighbor made.
- Dark Chocolate: For sugar free chocolate use chocolate that is 100% cocoa.

- Coconut Oil. use organic coconut oil.

Step by Step Instructions for Almond Joy Bars - No Sugar
Make the coconut bars.
- Add two toasted almonds to each well of the silicone candy mold.
- Add the coconut, maple syrup, salt, and coconut cream to a bowl. You only want to just the thick part of the can of coconut cream. So chill the can for several hours and then scoop off the thick cream. Save the thin watery part for a smoothie or drink it as coconut water.
- Combine the ingredients with a hand mixer and press the mixture into a silicone candy mold.
- Freeze for 30 minutes. Then remove the bars from the molds. Be careful and press up from the bottom to remove them; there is less chance of breaking one.
Coat the coconut bars with Chocolate.
- Use 100% cocoa dark chocolate bar for sugar free. Chocolate bars with less cocoa do have added sugar. However some may prefer their chocolate to have less of a bitter taste. I personally like to use 75% cocoa chocolate bars.
- Add the coconut oil to the chopped up chocolate and melt in a double boiler or the microwave. If you melt in the microwave melt in 30-second intervals. Stir after each 30 seconds to make sure your chocolate doesn’t develop hot spots. If the chocolate gets too hot it will seize up and you will have to throw it away and start over. Melt until smooth and ribbons off of a spoon.
- Coat each piece of coconut candy with the melted chocolate. Put the coated candy on a parchment lined baking sheet. I use a fork to hold the candy while I coat it and then transfer it to an offset spatula to make it easier to place on the baking sheet.
- Let the candy cool and then you can dip the bottom of the bar if you want it coated with chocolate as well. Coating the bottom of the bar keeps the coconut from drying out. However they are so yummy they won’t last long so that may not be an issue.
- Store in an airtight container in a cool place or the refrigerator for up to 2 weeks.
