- 1 cup old fashioned rolled oats
- 8 organic Medjool dates
- ¼ cup organic unsweetened shredded coconut
- 1/2 cup mixed organic unsulphured, unsweetened dried fruit.
- ¼ cup pecans
- 1 tsp apple pie spice
- 8 oz semi-sweet chocolate chips or bar. premium quality
- 1 tbsp coconut oil
Instructions
Make the energy ball centers.
- Pit the dates and pour boiling water over the dates and let them soak while you toast the oats
- Toast the old fashioned rolled oats in a skillet over medium heat until browned.
- Add the oats to the bowl of the Breville Food Processor
- Remove the dates from the water and add them to the processor bowl. Set the water aside, as you may need some of it later.
- Add the Pecans and dried fruit.
- Add all of the rest of the ingredients except the chocolate and coconut oil to the bowl. The chocolate is for dipping.
- Process until finely chopped and the contents of the bowl begin to come together. Add a couple of Tbsp of the date water if the mixture is dry.
- Form balls using the cookie scoop by pressing the dough into the scoop until it is level with the scoops edge. The flat bottom on the ball makes it easier to dip them in the chocolate
Coat the candy balls with melted chocolate.
- Add the coconut oil to the chocolate.
- Melt the chocolate in a double boiler over boiling water or in the microwave in 30-second intervals. Stir after each 30 seconds. Don't overheat the chocolate, or it will seize up or turn whitish after it is cooled,
- Insert a long toothpick into each ball and dip the ball into the melted dark chocolate to coat.
- Place each chocolate-coated ball on a piece of parchment paper.
- Sprinkle with a few finely chopped pecans or the coconut.
- Let the chocolate-coated energy balls sit until the chocolate is firm and no longer tacky.
