Roasted Watermelon Radish with Cauliflower

Watermelon Radish and Cauliflower roasted with garlic and olive oil, then topped with grated asiago cheese.

Ingredients

  • 3 cups cauliflower florets
  • 3 cups radish cut into wedges
  • 2 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 1 tbsp umami powder (flavor enhancer)
  • salt and pepper to taste
  • cup Asiago cheese (see notes) fine grated

Instructions

  • Preheat oven to 425°
  • Toss the cauliflower, radish wedges, garlic, and umami powder with the olive oil.

  • Roast at 425° on a parchment-lined baking sheet for 20 - 25 minutes

  • When the veggies are fork-tender sprinkle with the asiago cheese and serve.
