Gather your Ingredients

Before you start baking, you will need to make sure you have a 10 inch round cake pan or shallow baking dish. I was at the store the other day and spotted these Unicorn chips. They are pink and blue swirled vanilla chips. How perfect for a Unicorn Cookie Cake. In addition to the chips I used Sprinklefetti Happy Unicorn Sprinkles. The rest of the ingredients are the usual cake or cookie ingredients. Flour, sugar, eggs, baking powder and vanilla. Use Dye-Free plant based coloring.

 

SIS (simple is smart) steps to make the Unicorn cookie cake

  1. Preheat the oven 
  2. Mix together the dry ingredients
  3. Cream the butter and sugar and add the vanilla and eggs. 
  4. Add the flour in 3 batches.
  5. Stop and scrape the bowl frequently.
  6. Put a 10-inch circle of parchment in the bottom of the baking pan and grease the pan.
  7. Pour the batter into the pan and bake for 30 minutes at 350 degrees or until the edges are lightly browned and the center is set. 
  8. Let the cake cook completely before decorating.

Decorate the Unicorn Cookie Cake

Make and color buttercream frosting hot pink and blue.  Alternately purchase Hot Pink and Aqua Blue frosting. The horn and ears are a Unicorn Cake Topper that I took apart and attached with some frosting. Put the blue and pink frosting in separate bags and pipe them together onto the unicorn cookie cake. (see the video).  Add the horn, ears, flowers, and eyes.

Ingredients

  • ¾ cup unsalted softened Butter (170g)
  • cups Sugar(300g)
  • 2 large Eggs
  • 1 tsp Vanilla
  • 2 cups Cake Flour(240g)
  • ½ tsp Baking Powder
  • 1 tsp Salt
  • 1 cup Unicorn Chips(170g)
  • 2 tbsp Unicorn Sprinkles

Instructions

  • Preheat over to 350°F (176°C)
  • Mix together the flour, salt, and baking powder, and set aside.
  • Add the butter and sugar to a mixing bowl. Beat with a stand mixer or hand mixer until light and fluffy. Scrape down bowl.
  • Add the eggs, one at a time, Beat on medium after each egg to mix them in.
  • Add vanilla and mix in.
  • Add the dry ingredients in 3 batches, mix well after each addition. Scrap the bowl once during the addition of the flour.
  • Stir in the unicorn chips and sprinkles by hand.
  • Put the batter in a parchment-lined, greased 10-inch pan.
  • Bake for 30 minutes.
  • Decorate with buttercream frosting and a unicorn cake topper. You can remove the cookie cake from the pan before decorating it or leave it in the pan.
  • Let cake cool completely.
