  • 1 yellow onion, finely chopped (divided)
  • 2 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 28 ounces crushed tomatoes
  • 1 bay leaf
  • 2 tbsp olive oil

  • Drain the leaves and let them cool enough to handle. Trim the thick center rib on each leaf so it folds easily.

Make the Sauce:

  • Dice the onion finely and divide in two.
  • Put the canned tomatoes in a bowl and crush them by hand.
  • Add the tomato sauce to the bowl. Set aside.
  • Add 1 tablespoon of the olive oil to a large, deep skillet with a lid over medium heat. Add half the diced onion and cook until just beginning to caramelize and brown, 5-8 minutes. Remove from pan and set aside to be used in the cabbage roll stuffing.
  • Add the olive oil back into the same pan and reduce heat to medium low. Add the remaining diced onion and cook, stirring frequently, until the onions are soft, but not taking on any color.
  • Add the crushed tomatoes with the tomato sauce, add the salt and the bay leaf.
  • Bring to a low simmer, stirring occasionally for about 5 minutes. Then turn heat off.

Mix the filling:

  • In a large bowl, combine 1 pounds ground beef or pork, 1 cup cooked white rice, thecarmelized onion you set aside, 2 garlic cloves, minced, 1 teaspoons salt, 1/2 teaspoonsblack pepper, and 1/2 teaspoons paprika. Mix gently with your hands until just combined; don't overwork it.

Stuff the cabbage rolls:

  • Place about 1/3 cup of filling near the base of a leaf. Fold in the sides and roll up tightly, like a burrito. Repeat with remaining leaves and filling.
  • Spread a thin layer of sauce in the bottom of a large pot or Dutch oven. Arrange the cabbage rolls seam-side down in layers, pouring sauce between layers. Tuck in 1 bay leaf, cover, and bake for 1 ½ hours.
