What Do I need for Rainbow Waffles?
The batter for these waffles is easy to make. I’ve adapted my favorite waffle recipe to create these yummy rainbow waffles. I’ve added cornstarch to help thicken the batter without making a dry waffle. Both baking soda and baking powder are in this recipe. The baking soda keeps the waffle tender and helps with the crispy crust. The baking powder gives the waffles a nice lift. I usually separate the egg whites and beat them until they are fluffy. I then fold them into the batter. However, because you are coloring the batter and putting it into the plastic squeeze bottles this extra step is unnecessary.
The buttermilk adds a tang to their flavor and the sugar lightly sweetens them. For extra flavor, I’ve added vanilla extract. Almond extract is also delicious.

Let’s Make these Waffles – Step by Step.
- Preheat the waffle maker.
- Mix all of the dry ingredients.
- Add the liquid ingredients to the dry ingredients and whisk until nearly smooth. Small lumps are ok, but larger lumps will clog the squeeze bottle tip.
- Divide the batter into four bowls and color each bowl of batter. I used blue, green, yellow, and pink. Put the colored batter into the 4 squeeze bottles and cut about half of the tip-off to enlarge the opening in the tip.
- Star with the blue and make a small circle in the center of the waffle maker. Then add a ring of green, a ring of yellow, and finally, the outermost ring is pink. Close the waffle maker and cook until lightly browned and crispy on the edges.
- Serve with a generous dollop of whipped cream and top with Unicorn Sprinkles. Strawberries and Syrup are also delicious on top of the waffles.

- 2 tbsp Corn Starch
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 large Eggs
- 2 cups Buttermilk
- 4 tbsp. melted Butter Let cool a bit before adding so it doesn't cook the eggs.
- 1 tsp Vanilla or Almond Extract
Instructions
- Preheat mini waffle maker.
- Mix together the dry ingredients in a mixing bowl. Flour, sugar, corn starch, baking powder, baking soda, and salt.
- Add the liquid ingredients: buttermilk, eggs, flavoring, and melted butter.
- Whisk together until smooth. (lumps in the batter will clog the tip of the bottles)
- Divide into 4 bowls and add 2 or 3 drops of food coloring to each bowl to make blue or purple, green, yellow, and pink batter. Fill a plastic squeeze bottle with each color of batter. You may need to cut the tip to give a larger opening. (see notes for a dye-free coloring)
