What do I Need To Make Pretzel Crack?

Pretzel crack has three simple ingredients, pretzels, toffee, and white chocolate. The Pretzel crack uses my simple homemade caramel recipe. Instead of cooking the caramel to the “softball” stage, it is cooked to the “crack” stage of candy making. The crack stage turns the caramel into toffee. I add some pink candy melts and heart sprinkles for a Valentines’ day vibe. It is that simple.  

SIS TIP:  Take the time to Lay the pretzels in a single layer on the baking sheet. It makes it easier to spread the melted white chocolate evenly over the pretzels.  

Make the Crack – I Mean Caramel. 

Use a heavy bottom saucepan to make the caramel/toffee. Melt the butter in the pan and add the brown sugar and corn syrup. Bring to a boil and heat until a candy thermometer reads 280-degrees F.  

My SIS (simple is smart) tip this week. You don’t need a candy thermometer. Use an instant-read thermometer instead. If you don’t have either thermometer, drop a few drops of the mixture into ice water. If the caramel turn’s hard and crunchy like toffee – it’s done. The mixture is now toffee. Remove from the heat and pour the mixture over the carefully arranged pretzels. Don’t worry if all of the pretzels don’t get coated. You will bake it in the oven for eight to ten minutes or until the caramel is bubbly in the center and the pretzels are all coated.  

Coat the Pretzel Crack with White Chocolate. 

As soon as the toffee-coated pretzels come out of the oven, sprinkle the white chocolate chips over them. Put the pan back in the oven briefly- two minutes. This softens the white chocolate, making it easier to spread.  

While the white chocolate is softening in the oven. Melt the pink candy melts in the microwave. Add about a tsp of vegetable shortening to the melts and microwave for 30 seconds at a time. Stir after every 30 seconds until the candy is melted and smooth. Place the pink melted candy in a decorating cone or make a parchment cone. 

Spread the melted white chocolate evenly over the pretzel crack.

Decorate the Pretel Crack

Put the melted pink candy in a decorating cone and decorate the pretzel crack. I swirl the pink candy onto the crack and then spread it to create a design.  

Chill the pretzel crack in the freeze for 30 minutes before breaking into small pieces.

Store in an airtight container.

Ingredients

  • Preheat the oven to 325°F (177°C)
  • Line the baking dish with aluminum foil and spray with non-stick spray or coat with butter.
  • Lay the pretzel squares in the baking dish in a single layer. Don't overlap or the top will be uneven and make it harder to spread the chocolate.

Make the caramel toffee

  • Melt the butter in a kettle with a thick bottom core.
  • Add the brown sugar and corn syrup to the butter. Mix and bring mixture to a boil.
  • Boil for 3 to 5 minutes or until the temperature of the mixture is 280°F (138°C). Use an instant-read thermometer or candy thermometer.

Make the Pretzel Crack

  • Pour the caramel over the layer of pretzels. Don't worry if there are some areas without caramel. You are going to bake it in the oven which will distribute the caramel evenly.
  • Bake the pretzels and caramel for eight to ten minutes or until the caramel is bubbly in the center and throughout the baking dish.
  • While the pretzels and caramel are baking, melt the pink candy melts. Put the melted pink candy in a decorating cone or cone made of parchment paper.
  • Remove from oven and sprinkle the baking chips over the caramel. Return to the oven for 1 to 2 minutes to soften the white chocolate.
  • Immediately spread the white chocolate over the caramel. Then drizzle the pink chocolate on top. Use a rounded tip swizzle stick or something similar to create a swirled pattern on the top of the pretzel crack.
  • Chill in the freezer for 30 minutes. Break into pieces. Store in an airtight container.
