Overview
Pecan cinnamon rolls are soft, fluffy yeast rolls swirled with a buttery cinnamon-sugar filling and finished with crunchy pecans for extra texture and rich nutty flavor. They are commonly served as a breakfast pastry, brunch centerpiece, or holiday treat and can be topped with cream cheese frosting, vanilla glaze, or sticky caramel pecan sauce. The best pecan cinnamon rolls are made with a well-risen dough, high-quality cinnamon, brown sugar, butter, and toasted pecans, creating a bakery-style roll that stays soft and gooey in the center while lightly golden on the outside. Proper proofing, generous filling, and baking just until set help produce tender rolls that remain moist for days. Search trends also show growing interest in make-ahead cinnamon rolls, overnight dough, and freezer-friendly baking methods, making these rolls a favorite for busy home bakers.
Pecan Cinnamon Rolls:
I’ve been seriously thinking about treating myself to a batch of warm, homemade sticky buns or gooey cinnamon rolls. My mom made the most incredible sticky buns, and they were always the highlight of breakfast. But with 12 people gathered around the table, there were rarely enough for second helpings. I always hoped there would be one more waiting for me.
Should I savor every bite, gently pulling apart each soft, cinnamon-filled layer and enjoying every bit of that sweet, buttery glaze? Or should I dive right in, eating as fast as I could in the hope that another sticky bun might still be waiting for seconds?
Now, I rarely stop at just one when I bake a fresh pan of pecan cinnamon rolls. It’s not unusual to go back for seconds, thirds, or even fourths. Four pecan cinnamon rolls definitely qualify as a full-on cinnamon roll feast.
What made my mom’s pecan cinnamon rolls so incredibly rich and unforgettable? The secret was the thick, fresh heavy cream from our family dairy cows. While it’s hard to find cream that rich today, store-bought heavy cream still creates wonderfully soft, indulgent cinnamon rolls. And, of course, her generous handful of brown sugar mixed into the cream didn’t hurt either—it gave every bite an irresistibly sweet, caramel-like flavor.

This pecan cinnamon rolls recipe has been passed down from my grandma and remains a family favorite. As the rolls bake, the rich heavy cream and brown sugar mixture transforms into a gooey, caramel-like layer that coats the bottom. Once baked, simply flip the rolls over to reveal irresistibly sticky, buttery pecan cinnamon rolls. They’re at their absolute best served warm, fresh from the oven. Absolutely delicious!
A bit about the Dough:
The secret to exceptional sticky buns begins with the dough. It should be soft, tender, and well-hydrated without becoming overly sticky, allowing it to rise beautifully before baking while maintaining enough strength for a light, fluffy oven spring. This perfectly balanced dough pairs wonderfully with the rich, buttery caramel beneath it, creating an irresistibly gooey, bakery-style treat that’s delicious in every bite.
What you need to know about the filling for Pecan Cinnamon Rolls.
The heart of every pecan cinnamon roll is its rich, flavorful filling. Start with real butter, dark brown sugar, and high-quality cinnamon for the best results. Ceylon cinnamon, sometimes called Mexican cinnamon, offers a delicate, mildly sweet flavor, while Vietnamese cinnamon delivers a bolder taste with a naturally higher oil content that spreads beautifully throughout the dough. If you enjoy a richer, more pronounced cinnamon flavor, Vietnamese cinnamon is an excellent choice.
The true showstopper, however, is the irresistibly sticky topping. Before placing the rolls into the baking dish, generously coat the bottom of the pan with a mixture of heavy cream and brown sugar. As the rolls bake, this creates a rich, caramel-like glaze that perfectly complements the toasted pecans and soft, fluffy dough.
Bring these simple yet flavorful ingredients together, and you’re ready to bake a batch of irresistible Pecan Cinnamon Rolls that are warm, gooey, and perfect for any occasion.

- 1 ¾ cup brown sugar packed, divided into ⅔ cup, ⅓ cup, and ¾ cup
- 1 Tbsp cinnamon Vietnamese
- ¾ cup heavy cream divided into 1/2 cup and 1/4 cup
- 1 ½ cup pecans optional I use halves**
Instructions
Sticky Bun Dough
- Mix all the dry ingredients together.
- Mix wet ingredients together and add to dry.
- Use a stand mixer with the dough hook attachment to mix the dough. Mix on medium for 2 minutes. The dough will start out sticky and become smooth and not sticky but still soft. You may need to add an additional 1-2 ounces of water. If you add additional water mix on low for 1-2 minutes until the water is incorporated, then increase the speed to medium and mix another minute.

- Put the dough in a lightly greased bowl large enough for the dough to double in size. Cover the bowl with plastic wrap to prevent a skin from forming on the dough. It will take about an hour for the dough to double in size.

Sticky Buns
- prepare the 9 x 13-inch pan by adding ½ cup heavy cream and ⅔ cup brown sugar to the bottom of the pan. The 9 x 9-inch pan add ¼ cup heavy cream and ⅓ cup brown sugar. Thoroughly mix the cream and brown sugar with a spoon or whisk.

- Sprinkle the optional 1 cup of pecans on top of the cream brown sugar in the larger pan and 1/2 cup in the smaller pan. May add less or more as desired.

- Once the dough had doubled in size lightly flour your work surface and put the dough on the work surface. No need to deflate prior to rolling out.
- Roll the dough into a rectangle roughly 16 x 21 inches.

- Spread the dough with the 4 Tbsp soft butter.
- Spread 3/4 of a cup of brown sugar on the dough.
- Sprinkle with the cinnamon and roll the dough into a 21 inch log.

- Cut the log into approximately 18 or 19 one inch thick cinnamon rolls.

- Place 12 rolls in the large pan on top of the heavy cream mixture. Place the rest of the rolls in the smaller pan.

- Preheat oven to 375 degrees.
- Cover pans with plastic wrap and let the rolls rise until almost doubled in size. Rolls will be barely just touching each other. This takes 20 to 30 minutes

- Bake for 10 minutes at 375°, then reduce the heat to 350° and bake another 30 minutes or until the rolls are browned on top and the cream on the bottom has a caramel color.
- Delicious warm or room temperature. Once cool enough to handle remove from the baking dish and turn upside down. Scrape out any extra topping left in the pan onto the rolls.
- Rolls can be stored at room temperature for 24 hours or refrigerated for 5 days, or frozen for 2 months.

- Reheat refrigerated rolls in an oven or toaster oven at 400 degrees for 5 - 7 minutes.
