If possible use Roma tomatoes for your oven-roasted tomatoes.  Why?  They have less juice and it’s easy to remove the juicy, pulpy areas where the seeds are. They will oven dry quicker and still retain all of their flavor and sweetness. 

Removing the seeds is especially important if you have ever had diverticulosis.  As I am sure you are well aware, tomato seeds may be a contributing factor in the development of diverticulosis.  So most doctors, myself included recommend that their patients avoid eating tomatoes of remove the seeds from them prior to eating them.

What do you Need to Make Oven-Roasted Tomatoes?

The ingredient list is super short for this recipe.  If you lump seasonings into a single category it only has three ingredients:  

  • Tomatoes – Fresh, plump, organic, homegrown or farmers market Roma tomatoes preferred.  You will need about 6-7 lbs to make 8 cups of fresh tomatoes cut into quarters. 
  • Seasonings –  Again fresh, organic herbs.  I chose oregano, basil, thyme and a bit of sea salt to intensify the flavor.  You can also add flat leaf parsley and marjoram.   If you like a little kick throw in a few red pepper flakes. 
  • Olive Oil – Extra Virgin olive oil.   If you have some garlic infused olive oil add some of that as well.  
  • Bonus tip:   use garlic infused olive oil for extra flavor. 

That’s it – So Simple.

Step by Step Instructions for how to Oven-Roast Tomatoes

  • Preheat oven to 350 degrees F. 
  • Wash and pat the tomatoes dry. 
  • Cut off any bad areas and cut them into quarters, slicing them from the stem to the blossom end.  
  • Toss with about 2 tbsp of extra virgin olive oil and salt as you prefer. 
  • Place on a parchment-lined sheet pan with the juicy side up and the skin down. 
  • Roast for 1 hour.
  • While they are roasting finely dice your fresh herbs. 
  • Add your fresh diced herbs to each tomato when the hour is up.
  • Roast for another 1-3 hours, depending on how juicy they are.  Check every hour and remove any tomatoes that are done to prevent them from burning. 

Serving ideas:  add to pizza, pasta, sauces, focaccia, or bruschetta.  Eat them as an appetizer or healthy snack, or stuff them into a sandwich.
