This year we had a bumper crop of butternut squash. Farmer Fred looked like he had just won the lottery when he rolled up to the house with the front loader of his tractor full of butternut squash. He had a total of 85 squash. At 2lbs per squash, that is a total of 170 lbs of squash. WHOA, what will I do with all that squash?
What Can You Use Butternut Squash For?
Hmmm, let’s see, you can make herb roasted butternut squash. You can boil and mash it, make it into soup, and bake it. I wonder how butternut squash bread tastes? You can cook and puree it, and freeze the puree in an ice-cube tray for use later. How about make it into a pie – use your pumpkin pie recipe and don’t tell anyone it’s a squash pie.
You can store it whole in a cool, dry place for 3 – 4 months. Lastly, if you have excess butternut squash, you can share it with friends, colleagues, coworkers, and the local food pantry. So if I show up with a bag of butternut squash don’t say I didn’t warn you!!!

Use a potato peeler instead of a knife to peel your butternut squash. It is safer as the squash is odd shaped and the skin/peeling is very hard. The curves of the squash make it harder to cut the peels off and more likely a knife will slip and peel off your skin instead of the skin on the squash. OUCH.

Step by Step Instructions for Making Herb Roasted Butternut Squash
- If you don’t have a batch of Mediterranean Longevity Seasoning Blend, take a minute to mix one up. Then, you will have enough for use now and later.
- Peel the squash with a potato peeler and scoop out the seeds. This recipe uses 6 cups of squash cubes.
- Dice into 1-inch squares and place the squares in a mixing bowl.
- Sprinkle with two tablespoons of olive oil and 1 1/2 tablespoons of Mediterranean Seasoning blend. Toss to coat.
- Spread the squash out on a foil or parchment-lined baking sheet.
- Bake at 425 degrees for 20 minutes or longer, depending on how browned you like your squash.
- Serve hot. Leftovers reheat well in the oven. Preheat the oven to 400 degrees F and reheat the squash until hot through, usually about 5-8 minutes.

Also, press your fingernail gently into the squash’s rind; if the skin resists puncture, the squash is ready to be harvested. Pick the squash before the first frost or freeze. A light frost may not damage them, but a heavy frost or freeze will cause soft, dark brown spots on the squash, making them susceptible to spoiling quickly.

- 2 lbs butternut squash peeled and cut into 1 inch cubes
- 2 tbsp organic extra virgin olive oil
- sea salt and black pepper freshly ground to taste
- 1 ½ tbsp Mediterranean Longevity Spice Blend - see notes below
Instructions
- Preheat oven to 425 degrees F
- Peel the squash, remove the seeds
- cut the squash into one inch squares
- Drizzle the olive oil over the squash
- Add the Mediterranean Longevity Spice Blend and toss to combine.
- Spread the squash on a parchment-lined sheet pan or in a shallow baking pan.
- Roast in the oven for 20-25 minutes or until soft and tender on the inside and lightly browned on the outside. If you like them caramelized roast for 30 minutes.
