  • 1 cup pumpkin puree
  • 4 tbsp apricot jam
  • 1 tsp butter vanilla emulsion or vanilla extract
  • 1 tsp pumpkin pie spice
  • 6 cinnamon sticks
  • 1 whole nutmeg for grating
  • whipped cream for topping

Instructions

  • Put the apple cider, pumpkin puree, apricot jam, vanilla, and pumpkin pie spice in a blender. This makes a thick drink see notes for a thinner drink.
  • Blend until frothy, about 10 seconds.
  • Pour into glasses and top with whipped cream. Add a cinnamon stick and grate some nutmeg on top.

Notes

With my homemade pumpkin puree, the flavor of this drink was amazing.  However, the consistency was more like a smoothie than a drink.   If you have extra thick pumpkin puree and want this to be a thinner drink, do the following.
  •  Cut the amount of puree in half.
  • Use apple juice instead of apple cider.
  • Use apricot necter and 1/4 cup of simple syrup instead of apricot preserves.
This yields a drink similar to the consistency of the drink at Universal Studios.
