  1. Turkey or Chicken Stock:  Use homemade bone stock or purchase bone broth.
  2. Cooked Rice: Basmati, Jasmine, or brown rice
  3. Carrots: Raw organic carrots
  4. Celery: Raw organic celery
  5. Onion: medium raw organic onion
  6. Leftover turkey meat from a roasted turkey or turkey breast. Don’t use deli turkey meat.

Step by Step Instructions for Turkey Rice Soup

Cook The Rice:

My secret for perfectly fluffy rice every time is to use a heavy-duty stainless steel saucepan with a lid.

  1. Bring the salted water to a boil.
  2. The ratio of rice to water is 1:2. For every cup of rice; you will need 2 cups of salted water.
  3. Add the rice and turn the burner down to as low as possible.
  4. Cover the pan with a lid and no peeking for 20 minutes.
  5. After 20 minutes, remove the pan from the burner and fluff the rice with a fork. 

Make the Soup:

  1. Chop the carrots, celery, and onions into pieces about 1/2 X 1/2 inch depending on how big or small you like the veggies in your soup. 
  2. Saute the onions and celery in a little oil in the frying pan. Saute until the onions are translucent
  3. Add the Chicken or Turkey Stock (see notes), onions, celery, and carrots to a 3-quart kettle and simmer for 20 minutes or until the vegetables are soft.
  4. Add the diced turkey pieces and adjust the salt to taste. Bring to a simmer and simmer for three more minutes.
  5. Add the rice to the soup.
  6. Garnish with fresh parsley and serve with a fresh warm baguette or a slice of Artisan bread.

  • 1 cup diced leftover roasted turkey
  • 1 quart Chicken Stock homemade is best. Use low sodium if purchased.
  • 1 medium onion fine diced
  • 1 cup carrots chopped 1/4 to 1/2 inch pieces depending on preference.
  • 2 stalks celery diced -1/4 to 1/2 inch pieces depending on preference.
  • ½ cup Basmati rice white or brown
  • 1 cup water
  • ½ tsp Salt
  • 1 tbsp parsley fresh coarsely chopped

Instructions

Cook The Rice

  • Bring the water to a boil, Add the salt
