What is in the Dry Rib Rub Seasoning Mix?


This seasoning mix for ribs has only six different spices plus sugar.  Sugar is a crucial ingredient in this rub.  It “glues” all of the spices to the ribs during the oven roasting process.  I think a fair amount melts off into the liquid in the roasting pan.  However, when I’ve cut back on the sugar, the ribs aren’t as flavorful as when I use it.  Remember, the recipe calls for eight tablespoons of sugar.  This is only one tablespoon per rack of ribs.  It sounds like a lot of sugar, but the BBQ sauce adds more sugar by far.

The rest of the ingredients are a variety of spices that include onion and garlic powder, paprika, and black pepper. The dried rosemary leaves are a little unusual, but don’t skip them. I will sometimes grind them up into a powder. The powder adds a depth of flavor that the leaves don’t give.

Mix all of the ingredients and store in an airtight container. Shelf life is about a year. If you find the seasoning has clumped, break it up before use.
