Get the Kiddo’s inspired to eat their breakfast this St. Patrick’s day.  Let them each make a Breakfast Monster Parfait for St. Patrick’s Day Breakfast.   They will be excited and love eating their adorable Leprechaun yogurt and granola Breakfast monster parfaits.  If you make the parfaits the night before, you might have to let them make two.  They will want to eat one as a before-bed snack and one in the morning for breakfast—what a great way to eat granola and yogurt.  

The Easy Steps for a Breakfast Monster Parfait.  

  1. Gather the ingredients.
  2. Make the stabilized whipped cream and set it aside. 
  3. Color the yogurt; yes, it is a scary green.  However, St. Patrick’s day is only once a year. 
  4. Layer the ingredients into the plastic parfait glass. (click here for parfait glass).  Top with stabilized whipped cream and Shamrock Sprinkles.  
  5. Watch the kiddos devour your healthy breakfast.

Here is the scoop on what you will need.  Eyeballs, big and little ones,  mix it up and have fun.  St. Patrick’s day sprinkles, and don’t forget the Kelly Green food coloring.  Homemade granola makes these guys extra tasty, and finally, some vanilla flavored Greek Yogurt.  Easy – Right? 

Once the stabilized whipped cream is made, split it into 2 equal portions and color one portion light green and a darker green portion.  Add each color to a 12-inch decorating bag and slightly flatten the bag.  Stack the two bags together and insert them into an 18-inch pastry bag attached to a large star piping tip.  This technique lets you swirl two colors of whipped cream or frosting together when you pipe it onto the breakfast monster parfait or a cupcake.

  • Plastic Parfait cups 5-ounce size.

Ingredients

Instructions

  • Make stabilized whipping cream (click here for the recipe) Split it in half and color one half dark green and one half light green. Put in a 12-inch pastry bag and set aside.
  • Split the yogurt between 3 bowls and add green food coloring to each bowl and stir in. Make one bowl dark green and one bowl light green. (see notes for dye-free food coloring)
  • Use a plastic 5-ounce dessert parfait cup. Draw the mouth on the cup with a red marker.
  • Layer the yogurt alternating with the granola. click here for the granola recipe.
  • Layer dark green yogurt, granola, light green yogurt, granola, dark green yogurt.
  • Partially flatten each bag of tinted whipping cream and insert both bags into a large 18-inch bag with a large star piping tip attached. Pipe the whipped cream in a swirl on top of the yogurt.
  • Top with a swirl of stabilized whipped cream, Add sprinkles and large candy eyeballs.

Notes

The parfaits can be made several hours before serving.  The granola will soften and not be as crunchy.  Kids may prefer it softer.
