Best Dinner Rolls with Cinnamon Butter

These Best Dinner Rolls with Cinnamon Butter are my copycat version of the Texas Roadhouse Dinner Rolls.  They are super soft and buttery without the cinnamon honey butter.  However, the Cinnamon Honey Butter definitely adds an extra layer of YUM!

I love a warm, buttery, super soft, and flaky dinner roll.  This roll brings back memories of holiday dinners.   Back 50+ years ago, before it was popular, we were vegetarians, ate organic food (if we didn’t grow it, we didn’t eat it), and the only time my mom made white flour rolls were for holidays or special occasions.

What Do I Need to Make These Dinner Rolls.

To make these soft and buttery dinner rolls you will need:

  1. White All-Purpose Flour, use a scale to weigh the flour. Scooping the flour will result in a drier roll.  If you don’t have a scale, sprinkle the flour in the measuring cup and then level the excess off. 
  2. Sea Salt and both Brown and Granulated Sugar.
  3. Yeast – Instant is best.  I use SAF-Gold.  The bread is a rich thick dough and regular yeast will take longer to rise.
  4. Potato Flour.  if you don’t have potato flour use instant potato flakes. 
  5. egg, and melted butter.
  6. Luke-warm water.  

Make the Dough:

Add all of the ingredients to the bowl of a stand mixer.  Attach the dough hook and mix on low until well combined.  Then increase the mixer speed to medium and mix for 7 minutes.  This develops the gluten.  Well-developed gluten gives a softer, flakier roll.  

The dough will be soft and slightly sticky.  It will cling to the mixing bowl.  Cover and let rise for two hours. It should be more than double in size.

Shape and Bake the Dinner Rolls.

  • Once the dough rises, roll the dough out into a rectangle that is 1/2 of an inch thick.   
  • Fold the dough in half and cut the folded dough into 24 squares.  Use a sharp knife or pizza cutter. 
  • Put the rolls on a parchment-lined baking sheet and cover with plastic wrap.  Let rise for one hour. 
  • Brush with melted butter before baking. 
  • 15 minutes before the end of the hour preheat the oven to 375-degrees F. (190 C)
  • Bake 12 -15 minutes.  Check the internal temperature of a roll with an Instant Read Thermometer.  It should be 190-degrees F. (87 C)
  • Brush the tops with more melted butted after the rolls come out of the oven. 

Make the Cinnamon Honey Butter:

With a hand mixer, mix the butter (butter should be room temperature), powdered sugar, cinnamon, and honey. 

Serve the Cinnamon Honey Butter with warm rolls.

Ingredients

Rolls

  • 5 cups all-purpose flour (600g)
  • 4 tbsp Brown Sugar
  • 3 tbsp granulated sugar
  • 4 tsp yeast 2 packages, SAF Gold is best if you have it.
  • 1 tsp salt,
  • 2 tbsp potato flour If you don't have potato flour use 1/4 cup of instant potatoes.
  • 4 tbsp melted butter
  • 2 cup water luke warm
  • 2 large eggs

Cinnamon Honey Butter

  • 1 tbsp. honey
  • ¼ cup powdered sugar
  • 1 tsp. cinnamon
  • 1 stick butter at room temperature

Instructions

Make the Dough.

  • Put the flour, sugar, salt, yeast, and potato flour in the bowl of a stand mixer.
  • Add together the warm water and melted butter. Mix and add to the dry ingredients. Add the eggs, then mix on low to combine.
  • Increase the speed to medium, mix for seven minutes more. The dough should be smooth and very soft. It will stick to the bottom of the mixing bowl.
  • Remove the dough from the bowl and shape it into a ball. Use a little flour to keep the dough from sticking to your hands and the counter.
  • Put the dough back into the lightly floured mixing bowl and cover with Plastic Wrap. Let rise for two hours. At the end of the two hours, the dough should be more than double in size.

Shaping and Baking The Rolls.

  • Once the dough has more than doubled in size, turn it out onto a lightly floured counter and roll into a rectangle that is 1/2 inch thick.
  • Fold the rectangle in half and cut the dough into 20 to 24 rolls with a sharp knife or a large pizza cutter.
  • Cover and let rise in a warm place for another hour or until very puffy.  Preheat the oven to 375 degrees during the last 30 minutes of rising.  Brush the rolls with melted butter and bake for 12 - 15 minutes.  The rolls should be 190°F in the center. Check with an instant-read thermometer.
  • Remove from the oven and brush with melted butter once more. 

Make the Cinnamon Butter

  • Mix all the ingredients with a hand mixer until fluffy. Serve with the warm rolls.

SIS (simple is smart) tip

  • Reheat leftover rolls:
    10 minutes before serving preheat the oven to 400 degrees F.
    Put the rolls in a brown paper bag and moisten the bag with water from a spray bottle.
    Heat in the oven for five minutes.

Notes

The rising times may vary depending on the temperature of the kitchen.  On warm humid days the times can decrease by 50%.  If the kitchen is below 68 degrees the rising times will increase.
